A Chocolatier That Will Make You Fall in Love

I’ve spent virtually my entire life surrounded by the culinary glitterati. I’ve met, and worked with, the best in the business from chefs to bakers to pitmasters. But when it came to chocolate, that, for me, was always a different animal. My fondness for amazing chocolate has always been without boundary. But I had never met a chocolatier that truly set my heart on fire and pushed my soul to sweet surrender. That is until now. Meet M.Cacao.

This sweet enterprise in Massachusetts was presented to me during a virtual press roundup of brands for Valentine’s Day. While I was a little apprehensive at first, given the aforementioned comment about chocolate, I quickly figured out (especially since I only had a few minutes with them) that this was no ordinary chocolatier and company.

Michael Nichols, a former robotics entrepreneur, and Chef Delphin Gomes are the owners of M.Cacao. Their genuine approach to both the craft and business of chocolate are literally the ingredients of legend. That is only surpassed by the incredible flavors, quality of product and creative flare with which they create and sell their chocolates. Trust me when I tell you that you will be hearing more and more about these two mad geniuses in my Great Bites column throughout the year.

In this February edition of our magazine, you will find them present in the Life & Style Gift Guide as well as in my Great Bites column for a couple of examples of their creativity. First off, I have to say, their Hearts & Roses Collection chocolates quite literally melt in your mouth and leave you wanting so many more. The flavor is spot on. The quality of the chocolate is divine. And the packaging is just stunning. The same is true for their Salts of the World Collection and the many other assortments they’ve created (I don’t want to spoil it all for you!).

The only thing I can really say to explain the experience you happily endure from that first bite to the last is that if I worked with them, I would be in Chocolate Eaters Anonymous faster than you can say YUMMO!  

I recently had a chance to speak with Michael and Chef Delphin. But given the level of expertise, creativity and passion for which they operate M.Cacao, I have decided to hold off until another issue to publish the interview. Yes, it is that good and they are that amazing. In the meantime, I will leave you with a little teaser. 

NYLM: What inspired you to start M. Cacao in a world filled with chocolatiers?
Chef Delphin Gomes: We wanted to create something that didn’t just follow tradition but advanced it. Chocolate is an art form, a science, and an experience—and at M. Cacao, we fuse those elements together in ways that surprise and delight. My background in classical French pastry and chocolate-making, combined with Mike’s experience in robotics and engineering, gives us a completely different perspective on what chocolate can be.

Michael: Most chocolatiers focus on making pretty chocolates, with pretty standard flavors. We focus on creativity and innovation—whether that’s infusing unexpected flavors like cheese or global salts into our chocolates, combining chocolate with gifting a piece of yourself with our Expressio, or crafting ArtBars with flavors inspired by beautiful, edible artwork.

Chef: At the heart of what we do is the desire to create something both unique and truly great—not just in terms of taste, but in the way we engage people with chocolate. We believe chocolate should be more than just a treat; it should be an experience, a conversation, and a memory in the making. That’s what inspires us every day.
